My dad leaves for Chile tomorrow! Last night we had a bon voyage party for him. It was a blast! Guests included: my nieces, whom I ADORE, and my older sis (all of whom I don’t get to see very often), my Tia Margareta and Sergito, (her grandson and he is soooo cute), my sister’s boyfriend Joey, Natas, and of course my mom, dad, and last but not least Jarrett and I. This is a recipe for a very loud gathering and endless laughter. We feasted on the yummiest Chilean food. There were empanadas pino (meat) and empanadas queso (cheese for you gringos…NOTE: Jarrett made some of the empanadas. He is so converted Chilean), homitas (which is this really good mashed corn stuff), and a salad that I can not spell with out butchering (this salad was key because the main ingredient is cilantro and Natalia HATES cilantro; so literally one by one as we noticed the salad Joey, Jarrett, and I all tried to scheme to get her to take a bite. It was a failed mission, but a fine attempt at making her gag). After there were tons of yummy desserts including Natalia’s famous apple dip (which isn’t really Chilean, it’s just so good that we always ask her to make it…especially Katarina) After pigging out, or at least I did but what else is new, the key moments included: Jarrett explaining to Sergito that he knows some Spanish like “Como está”, and playing a game that we made up (I won’t even go into it, but it was so fun and of course we were all dying laughing). Needless to say, I am so blessed to have such a wonderful family and I love them all so much! I pray that my dad has a safe trip there and back and a blessed visit. I will miss you Papi!! You are one of my greatest BFFs!
